Midweek Munchies: Nigella’s Praised Chicken

Since stumbling across this recipe during my bedtime reading of Nigella Lawson’s book, Kitchen, it has been the ONLY thing I want to do with a whole chicken.

Cooking a chicken the praised way (a mixture of braising and poached), championed by Nigella and her mother, means that you barely throw anything away. Great for those trying to be thrifty.

No-one can tell you how to do this recipe but the woman herself…so take it away Nigella!

Nigella’s Praised Chicken

I use leftovers in stir fry, soup, with potatoes, chips, rice, noodles etc.
Hope you enjoy it as much as I do!

Thriftiness

Ok, this recipe will actually save you money as long as you are willing to pick the bones clean. Buying one whole chicken and then using ALL the meat and ALL the juices as stock (a great base for ALL soups that aren’t for veggies), is cheaper than buying just 4 chicken breasts for a meal. You could even then boil the bones some more for more stock, I never do, as I get LOADS out of the water/stock mix!
